Potatoes Salad with Smoked Fish

Ingredients: 1 lb smoked fish (preferably smoked whitefish), mayonnaise, 7-8 potatoes, 0.5 lb olives (I prefer Kalamata olives), salt, ground black pepper, 1 sweet onion.
1. Boil the potatoes in water with one teaspoon of salt. Do not over boil them.
2. Peel the potatoes while they are still warm and let them cool down.
3. Slice the potatoes in 1/4 inch pieces.
4. Clean the smoked fish of the bones and skin and dice it in 1/2 inch pieces.
5. Pit the olives and cut them in halves.
6. Slice the sweet onion as thin as you can.
7. Mix the potatoes, smoked fish, olives, sweet onion and mayonnaise in a bowl.
8. Add salt and ground black pepper to taste and mix the salad carefully to not mash the potatoes.
Refrigerate the salad for a few hours and serve it cold with fresh Italian or French style white bread.
